Winemaking:
Manual harvesting with selection on a sorting mat at the entrance to the winery. This is followed by destemming and crushing, and the result is transferred to temperature-controlled stainless steel vats for alcoholic and malolactic fermentation. Maceration for around 20 days, using the delestage technique. The wine is then aged for 24 to 30 months in used 225 litre French oak barrels. It ages for a further 6 years in the bottle before being released onto the market.

Tasting Notes:
Ruby with an opaque centre. Aroma of black fruit, cedar, leather and graphite. Full-bodied, with firm tannins but polished edges. Vibrant acidity that remains throughout the tasting. Very long and mineral finish.
Store and Serve Advices:
Store in a cool place (12 to 14 Cº) protected from light, without great temperature variations. Serve at 16-18 Cº. Decant about 30 minutes before serving. It's ready to drink, but will evolve positively up to 20 years after harvest.

This wine finely accompanies red meats, roast beef and grilled meats.
